Mango Salmon Tacos

DF MANGO SALMON TACOS

Salmon delivers omega-3s and high-quality protein, while mango and fresh vegetables add fiber, antioxidants, and digestive support

INGREDIENTS

Serves 2-3

For the Salmon:

  • 1lb salmon

  • 1 tbsp olive oil

  • 1/2 tsp chili powder

  • 1/2 tsp paprika

  • 1/4 tsp garlic powder

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • juice of 1/2 lime

For the Mango Salsa

  • 1 ripe mango, diced

  • 1/2 red bell pepper, diced

  • 1/4 red onion, finely diced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1/2 lime

  • Pinch sea salt

To assemble:

  • 6 small corn tortillas

  • 1/2 avocado, sliced

  • 1 tbsp of Dairy-free lime Crema per taco ( Dairy-free greek yogurt + lime juice + pinch sea salt)

  • Lime wedges for serving

DIRECTIONS

  • Season the salmon: pat dry and rub with olive oil, chili powder, paprika, garlic powder, salt, pepper, and lime juice

  • Cook: Pan-sear over medium heat 3-4 minutes per side until cooked through. Let rest, then flake into large pieces

  • Make the salsa: Combine mango, red bell pepper, red onion, cilantro, lime juice, and salt. Toss gently.

  • Warm tortillas: Heat in a dry skillet 30 seconds per side or directly over a flame until lightly charred

  • Assemble: layer salmon, mango salsa, and avocado onto each tortilla. Drizzle with lime cream if using. Finish with fresh lime.
